Pitas apricot pizza with goat cheese: easy recipe for a dinner without complications
The flatbreads of different cultures are great to take some licenses and improvise very simple pizzas with seasonal products. These pitas apricot pizzas with goat cheese show all the game that gives the stone fruit in salty dishes, especially if we like sweet and bitter contrasts.
We could use naan bread or even Mexican tortillas; the idea is to be able to take advantage of what we have at home, although nothing prevents us from preparing the base from scratch . When we lack the apricots, we can replicate the recipe with nectarines, peaches or even figs, at the end of summer.

- Pita bread or small 4
- Goat cheese freso or soft curl 120 g
- Mustard of Dijon 15 ml
- Zaatar or spices to taste (oregano, basil …)2 g

Preheat the oven with the grill to grill, or at 200º C with heat on top. Wash all vegetable ingredients thoroughly and dry gently. Flatten the pita bread with a rolling pin and paint on both sides with olive oil.
